Fluffy coconut pancakes with Coconaut® | Healthy weekend recipe

Finally have a little more time to cook this weekend, but you're not a MasterChef (yet)? Don't worry! Here's a simple and healthy recipe for super-fluffy coconut pancakes – finger-lickin' good!

The secret? 👉 Be sure to use the sparkling version of Coconaut® for extra fluffy pancakes!

🥥 Ingredients:

  • 1 can of Coconaut® Sparkling (320 ml)

  • 150 g wholemeal flour

  • 1 banana

  • 6 tablespoons desiccated coconut

  • 2 tablespoons vegetable oil

  • 1 teaspoon baking powder

  • 1/3 can coconut milk

🛠️ Preparation:

  1. Place Coconaut® Sparkling , banana and vegetable oil in a blender and blend until smooth.

  2. Add flour and baking powder and mix again briefly until a homogeneous dough is formed.

  3. Fold in the coconut flakes and mix carefully.

  4. Gently heat a non-stick pan – thanks to the banana and oil, you do n’t need any additional fat !

  5. Pour the batter into the pan in small circles.

  6. Bake for 2-3 minutes on each side until golden brown.

🍓 Serving suggestions:

  • Top with fresh seasonal fruits (e.g. strawberries, blueberries, mangoes)

  • Enjoy with a dollop of natural yogurt or some maple syrup

  • Sprinkle coconut chips on top for the ultimate coconut kick
