Finally have a little more time to cook this weekend, but you're not a MasterChef (yet)? Don't worry! Here's a simple and healthy recipe for super-fluffy coconut pancakes – finger-lickin' good!
The secret? 👉 Be sure to use the sparkling version of Coconaut® for extra fluffy pancakes!
🥥 Ingredients:
1 can of Coconaut® Sparkling (320 ml)
150 g wholemeal flour
1 banana
6 tablespoons desiccated coconut
2 tablespoons vegetable oil
1 teaspoon baking powder
1/3 can coconut milk
🛠️ Preparation:
Place Coconaut® Sparkling , banana and vegetable oil in a blender and blend until smooth.
Add flour and baking powder and mix again briefly until a homogeneous dough is formed.
Fold in the coconut flakes and mix carefully.
Gently heat a non-stick pan – thanks to the banana and oil, you do n’t need any additional fat !
Pour the batter into the pan in small circles.
Bake for 2-3 minutes on each side until golden brown.
